A HOME COOKED TRIBUTE

Rich's Grandma, Peggy Duda, was one of the most amazing people to walk this planet!  She passed away last summer, and sadly didn't get to see us move into our house- a place she would have loved.  So in her honor, I cooked our first meal in our new house last night as a tribute to her.  There was nothing better than Grandma Duda's Pot Roast, and so I knew it would be the perfect first meal to have in Casa McNally.
And boy it was!
GRANDMA DUDA'S POT ROAST
Ingredients- Serves 4
Beef Rump Roast or Bottom Round (3 lbs)
Carrots (4)
Celery (4)
Onion (1 large or 2 small)
1 28 oz. can diced tomatoes
1 28 oz. can tomato puree
1 8 oz. can canned mushrooms sliced
1 32 oz. boxed beef stock
- In a large Dutch oven, put in meat and marinate with olive oil, red wine vinegar, salt, pepper, oregano, garlic powder, parsley and thyme
- Then add carrots, celery and onions (chopped into large pieces), canned mushrooms, beef north, diced tomatoes and tomato puree
- Cook at 350' for 2.5 hours
- Serve with egg noodles, crusty bread and grated parmesan cheese.  Enjoy!

GREASE IS THE WORD...

Is the word that you heard...It's got groove taste it's got meaning.  Grease is the time, is the place is the motion in New Brunswick. Grease is the way we are feeling!  Okay, enough Frankie Valli (with a little tweaking of the lyrics) for a Friday post, Lori, but this post IS all about Grease!  That's because we jet setted over to the Grease Trucks in New Brunswick, NJ for some Fat Sandwiches the other night.
 What's a Fat Sandwich you ask?  Basically a sub roll with your choice of anything greasy on it (i.e.: burgers, cheese, chicken fingers, mozzarella sticks, french fries, bacon...you name it)!
There are a bunch (maybe 5 or 6) of Grease Trucks which are located on the College Avenue Campus of Rutgers University in New Brunswick, New Jersey.  They are open late night for the college students or for anyone in the mood for some greasy goodness.  I ordered the Fat Darrell (voted the #1 Fat Sandwich in the nation) which has breaded chicken fingers, mozzarella sticks, french fries and mozzarella sauce on it.  It was SO good!  Rich got the Fat Soprano which has fried chicken fingers, french fries, bacon, white sauce and hot sauce.  His was awesome too!
We washed it down with two cans of soda and for about $14 total had our dinner for the night.  We don't eat like this all of the time, but once in awhile you just gotta go for some greasiness, and when you do, there's no better place to do it than at the Grease Trucks.  We'll be back!!!!  Happy Weekend!
